Vegetable Biryani
A fragrant and flavorful rice dish packed with vegetables and aromatic spices.
Ingredients
- 2 cups Basmati rice, washed and soaked for 30 minutes
- 2 cups mixed vegetables (carrots, peas, beans, potatoes)
- 1 large onion, thinly sliced
- 1 tomato, chopped
- 1/2 cup plain yogurt
- 2 tbsp Biriyani Masala
- 1 tsp ginger-garlic paste
- 4 cups water
- 2 tbsp ghee or oil
- Salt to taste
Instructions
- Heat ghee/oil in a large pot. Fry the sliced onions until golden brown. Set half aside for garnish.
- In the same pot, add ginger-garlic paste and sauté for a minute.
- Add chopped tomatoes and cook until soft.
- Add the mixed vegetables, yogurt, Biriyani Masala, and salt. Cook for 5-7 minutes.
- Drain the soaked rice and add it to the pot. Stir gently.
- Pour in 4 cups of water and bring to a boil.
- Reduce the heat, cover the pot, and simmer until the rice and vegetables are cooked (about 15-20 minutes).
- Garnish with fried onions and serve hot with raita.
