Kerala Beef Ularthiyathu

A classic Kerala-style beef fry, slow-roasted with spices and coconut pieces.

Ingredients

  • 1 lb beef, cut into small cubes
  • 2 onions, thinly sliced
  • 4 tbsp Meat Masala
  • 1 tsp Turmeric powder
  • 1 tbsp ginger-garlic paste
  • 1/2 cup coconut pieces (thenga kothu)
  • 3 tbsp coconut oil
  • Curry leaves
  • Salt to taste

Instructions

  1. Pressure cook the beef with Meat Masala, turmeric powder, ginger-garlic paste, salt, and a little water for 4-5 whistles or until tender.
  2. Heat coconut oil in a heavy-bottomed pan. Add the coconut pieces and fry until golden brown. Remove and keep aside.
  3. In the same oil, add the sliced onions and curry leaves. Sauté until the onions are deep brown.
  4. Add the cooked beef along with any remaining stock. Cook on high heat until the water evaporates.
  5. Reduce the heat to low and continue to roast the beef, stirring occasionally, until it turns dark brown and dry.
  6. Add the fried coconut pieces and mix well.
  7. Roast for another 2-3 minutes. Serve hot.
