Kerala Beef Ularthiyathu
A classic Kerala-style beef fry, slow-roasted with spices and coconut pieces.
Ingredients
- 1 lb beef, cut into small cubes
- 2 onions, thinly sliced
- 4 tbsp Meat Masala
- 1 tsp Turmeric powder
- 1 tbsp ginger-garlic paste
- 1/2 cup coconut pieces (thenga kothu)
- 3 tbsp coconut oil
- Curry leaves
- Salt to taste
Instructions
- Pressure cook the beef with Meat Masala, turmeric powder, ginger-garlic paste, salt, and a little water for 4-5 whistles or until tender.
- Heat coconut oil in a heavy-bottomed pan. Add the coconut pieces and fry until golden brown. Remove and keep aside.
- In the same oil, add the sliced onions and curry leaves. Sauté until the onions are deep brown.
- Add the cooked beef along with any remaining stock. Cook on high heat until the water evaporates.
- Reduce the heat to low and continue to roast the beef, stirring occasionally, until it turns dark brown and dry.
- Add the fried coconut pieces and mix well.
- Roast for another 2-3 minutes. Serve hot.
